A blend of four new varieties of apples and Golden Russet.
The apples are harvested frozen and pressed frozen, after several cold spells of temperatures below -10 °C, to ensure that the fruits are properly frozen on the trees. The nectar, concentrated in this manner, is fermented for 8 months at low temperatures and is slowly clarified. The cider is bottled after a short stay in oak barrels.
This ice cider has a bright, golden yellow colour with copper nuances. The nose is expressive, intense and complex with mingling notes of apricots, candied pears, ripe apples, tobacco and spices. In the mouth, the flavours accurately reflect its aromas. It is powerful, silky and smooth. An amazing balance and a lingering finish characterize our Winter Harvest.
Serve between 10°C and 12°C with foie gras, blue cheese or dessert. Good to drink now, it can also be stored for several years.
