The apples are handpicked, crushed, and then pressed. The fermentation happens at low temperatures under pressure. Aged on lees, it is then filtered and bottled at low temperatures to keep just enough CO2 and all its freshness.
Tasting Notes (7% alc./vol.)
A dry still cider, with delicate apple aromas. In the mouth, it is smooth and supple with a hint of refreshing CO2.
Serve chilled between 8oC and 10oC.
Pairs well with white meats, sushi, mussels, raclette, and cheese fondue. Substitute La Bolée for white wine in your favourite recipes.
