 Du Minot des Glaces    
 Varieties:   McIntosh, Cortland, Empire, Liberty, Trent
 Cidrification: Ice cider is produced in winter through a combination of two processes :  cryoextraction and cryoconcentration.  The first consists in crushing and pressing apples that were frozen during the winter while the second consists in freezing the must (also during the winter) then extracting a sweet, flavourful concentrated syrup.  The musts are fermented at low temperature for 6 to 8 months.
 Results: An ice cider with subtle but complex aromas of candied apple and apricot.  A smooth yet pleasant acidity with concentrated flavours.  Excellent and fine mouth finish.
 Service: Serve chilled between 8ºc and 10ºc, the perfect pairing for foie gras, fine cheeses and desserts.
